Broccoli-Cheddar Mashed Potatoes
I want to tell you what I just made for dinner because it was SO GOOD!! When I was a child my mom would often serve baked potatoes with broccoli and cheese. I took that idea and made a mash out of it.
Broccoli-Cheddar Mashed Potatoes:
Serves 4 as a side dish, 2 as a main course
1 lb of potatoes
1/2 lb of broccoli crowns chopped fine
1 c. cheddar cheese
1/2 Tbsp plus 2 Tbsp butter
Cut potatoes into large chunks and place in a steamer basket over boiling water for 20 minutes (no steamer basket? boil in one inch of water)
While potatoes are cooking prepare the broccoli. Melt 1/2 Tbsp of butter in a heavy bottomed skillet and add chopped broccoli. Saute for a few minutes then add filtered water to the pan until it is slightly below the top of the broccoli. Allow to cook off and test your broccoli for doneness, if it needs more time add water again and allow to cook off. I did this three times.
Remove potatoes from the heat reserving cooking liquid and place in a large bowl. Mash and smash your spuds with a potato masher. Add broccoli, 2 Tbsp butter, grated cheddar cheese, salt and pepper. Mix. Gradually add the potato steaming water into the bowl until desired consistency is reached.
